Beef Australia 2012 has provided all aspiring chefs with an opportunity to have their very own recipe published and shared with the world in the official event program.
The competition was developed as part of the Consumer Education Program at Beef Australia 2012. It showcases the talent of individuals who are passionate about cooking beef in creative ways that enhance its flavour and nutritional benefits.
The competition encourages “at-home” chefs to experiment with beef products while preparing delicious recipes that could be a new family favourite or one that has been shared from generation to generation.
First place: Jon Condon, for his 'El Toro BBQ Steak Sandwich with Smoked Tomato Relish'
Jon is publisher of Beefcentral.com industry news and information website, and devised the winning recipe in association with a friend, Brisbane chef John Wakeling, when he entered in MLA’s “Tongmaster” amateur BBQ chef competition held late last year.
Ingredients:
Rustic Italian loaf
Rib fillet steak
Fresh garlic
Rocket
Relish: wood-smoked roma tomato + capsicum, red onion, jalapeno peppers, sweet paprika, fresh oregano, parsley, balsamic vinegar
Method:
Halve bruschetta loaf and rub with cut garlic clove. Rub rib fillet with remaining garlic and BBQ to medium rare, before resting and thickly slicing.
Relish: Smoke sliced roma tomatoes and capsicum over grape vine or citrus wood chips until well infused. Saute sliced red onion and finely minced jalapeno peppers in a little butter before adding smoked tomatoes and capsicum, sweet paprika, fresh oregano and parsley. Reduce to a thick relish consistency.
Smear one half of the bruschetta loaf with smoked relish, ad thickly sliced BBQ rib fillet, top with rocket and secure the 'lid' with a jalapeno on a toothpick.
